In true Malibuvian fashion, V’s a farm-fresh, seafood-centric, pretty classy eatery right along PCH, with housemade tagliatelle w/ wild boar ragout and diver scallops crusted w/ the Egyptian herb dukkah, which is probably the kind of person you’d be if you were trying to save your head in Egypt… these days, anyways.

About a week ago V’s restaurant + bar officially took over for Charlie’s on the PCH in Malibu with no leopard print chairs to be found. Phew. New owners Vassil Pertchinkov and Yassen Tonev of Guido’s in Malibu have redressed the space in a beachy palette of silvery blue and brown most appropriate for a restaurant across from the sea. Chef Chris Bocchino (Terra) is going for a seasonal California menu with a bit of Italy mixed in via pizza and house-made pastas. Right now one will find wild boar tagliatelle and English pea ravioli. Nothing here is especially cheap, but hey, this is Malibu. Appetizers are mostly in the teens, a La Quercia prosciutto pizza will set one back $20 (just for example Pizzeria Mozza charges $17 for a prosciutto di Parma pizza), and entrees run up to $39 for dry-aged veal chop.

Desserts, like local honey panna cotta, are crafted by Bocchino’s wife, Kristine. See V’s list of $12 cocktails “made with fresh ingredients + love,” it’s a mix of classics and newfangled interpretations.

Malibu, CA – In the Spring of 2013, restaurant veterans Vassil Pertchinkov and Yassen Tonev, acquired their dream restaurant space, located on Pacific Coast Highway just steps from the world famous Malibu Pier and world-class surf spot, Surfrider Beach. V’s restaurant + bar is due to open this summer, and will offer farm-fresh seasonal cuisine in an inviting, contemporary atmosphere not yet seen in Malibu.

At a time when Malibu is saturated with restaurants and shops that Malibu residents do not frequent, V’s will be a welcomed addition, offering approachable, farm-fresh, thoughtfully prepared California cuisine. A few of the artfully house-made ingredients will include fresh pastas, pizza dough, ricotta, mozzarella and smoked fish & meats. Other items that will make an appearance include 2-3 fresh seafood selections every day, a grilled dry-aged veal chop, filet mignon and a bone-in rib-eye. Paying close attention to the needs of their guests, V’s will also offer gluten-free pasta & pizza options, as well as many vegetable & grain dishes.

It’s unlikely that those D&G leopard print chairs will make a comeback because V’s restaurant + bar — a venture from Vassil Pertchinkov of shuttered Malibu Italian restaurant Guido’s — is en route to take over Charlie’s on the PCH in The Bu. Executive chef Chris Bocchino of The Godmother Cafe and the shuttered Terra in Malibu will head up edibles with wife Kristine as pastry chef. According to this here early Facebook page, V’s an “Upscale Casual” place with “an Amazing Cocktail Program and Unbeatable Fresh Seasonal California-Mediterranean Cuisine” will serve from breakfast though dinner.
